A Farmers' Market Salad



My mother took a Saturday trip to her local farmer's market and came back with all sorts of good things: sunflowers, salad greens, vegetables, and sprouts. We decided to make a big salad out of all the things at the farmers' market. Grilled eggplant, grilled yellow peppers, and beefsteak & yellow cherry tomatoes were laid atop curly endive and romaine lettuces. We topped the salad with lentil sprouts (which I'd never had before, and which were really good) and a mustard vinaigrette I made myself using mustard, lemon juice, olive oil, and salt & pepper. Some sunflower seeds would have been a nice addition but we didn't have any. My mother, stepfather, Georg, and I ate these salads with grilled ribeye steaks and lots of red wine.
