Sauteed Spinach and Curried Tilapia Over Brown Rice





This meal was pretty easy to make. The spinach was sauteed until it wilted in a skillet with garlic and olive oil. At the end I added some lemon juice so it'd keep its green color. For the tilapia, I put some ginger and garlic in a pan with some olive oil and red curry powder. Once it started getting sizzly, I added the tilapia filets and let them cook a bit. After I flipped the fish, I added a can of coconut milk and let it finish cooking in the curry sauce. The brown rice is just, well, brown rice. I garnished the food with some fresh basil and a lime wedge. I am including a photo of Georg finishing this dish.
