Roasted Pepper Quinoa Salad with Red Curry Glazed Tofu


In my last post I expressed a desire to cook something healthier and today I fulfilled that desire. Quinoa is supposed to be one of those superfoods...I mixed it with sesame oil and green and red roasted peppers. I don't usually eat tofu, I haven't liked it in the past but I thought maybe that's because I didn't like the way it was cooked. I seared some extra firm tofu in a skillet and added some red curry sauce at the end, but the texture was still freaky. About the only thing that made it edible was the red curry sauce. I would probably eat a stick if it had curry on it.
